Mr. S had his birthday over this wonderfully long weekend. An event that involved cupcake making and eating, a very good breakfast here, catching this movie matinee and the making of quinoa stuffed peppers for a quiet dinner at home. We had so much fun together, as usual. All in all, I can say that I think Mr. S had a very good birthday. And I suppose that even if he didn't, I enjoyed myself immensely. Ha ha ha.
I made these red velvet cupcakes complete with cream cheese frosting. I pilfered the recipe from Martha Stewart, here's the link. And as you can see, though he would never admit it himself too willingly, Mr. S loved these cupcakes. Had to half the recipe, seeing as there is only two of us, and we would eat them all in one fell swoop. A lovely dozen you see here. And yes, I ate hmmmm.. I think 6. Maybe 5.
I also used some silicon cupcake liners, instead of the paper kind. These are incredible. Go out and buy some right now. My lil sis gave them to me a few years back for a Christmas gift and I never used them until just recently. They are superb. There is no paper waste to throw away, thus helping the environment, and the cupcakes just slide right out of the liners. Very easy to use and a baking secret I highly recommend.
By the way, I do believe that these cupcakes are the perfect addition to your Valentine's Day festivities, in case you couldn't tell that by the decor and such. I have another such fun idea for V-day that I will post soon. Go make your cupcakes darlings! Eat as many as you like too! They are good for the soul.
